I know I’ve been slacking on the writing a bit lately, I’ll be picking back up again really soon! What I’m posting today is a quick recipe! While I am excited to share it with you guys, it is really here for my own selfish reasons. It’s a recipe that I adapted from a few different recipes, and so I don’t accidentally lose my own version of it, I’m posting to the blog 🙂
If you are into clean eating, paleo, comfort food, or you just like eating delicious things no matter what they contain, definitely give this one a try. It is one of my favorites! The husband approves too.
Sweet Potato Shepherd’s Pie
1 lb. ground beef (or chicken or turkey, your choice)
4 sweet potatoes
1 onion, diced
2 tsp. ghee
2 tsp minced garlic
1 tsp coconut oil
1 can of green beans
2 tsp smoked paprika
1 tsp cumin
1/2 tsp. cinnamon (or just a few shakes)
Salt and pepper to taste
OPTIONAL: chicken stock, lemon juice
Coat four large sweet potatoes in olive oil and cook in the oven (400 degrees for an hour)
When they are finished, peel and mash. Stir in about 2 tsp. of ghee and 1 tsp of coconut oil. Set aside.
In a large skillet, saute a diced onion and some minced garlic in olive oil. Add 1 lb of ground beef and brown it. Stir in salt and pepper to taste, smoked paprika, cumin, and cinnamon.
When beef is brown, add 3 diced zucchinis, 3 diced carrots, 1 can of green beans. I also added about 1/3 cup of chicken stock and a squeeze of lemon, but that’s really optional.
When everything has mixed together nicely and is soft (carrots and zucchini), transfer to a baking dish. Spread the sweet potatoes on top and bake at 400 degrees for 15 mins. Then broil for 3 minutes so the top gets nice and brown. Devour and wonder where this dish has been all your life.
