Heaven In A Strawberry Shell

Since my blog is already suffering from severe ADD, I figured I’d send it in another totally new direction with this post; a recipe!

My friend Taylor sent me a recipe earlier today saying she was going to make it for a dinner party she was attending. I jumped at the opportunity to hijack her idea and decided to make it for a bridal shower thrown by yours truly (I think?) at work tomorrow. They are strawberry cheesecake bites and OH MY WORD. SO delicious.

I put the strawberry bites together and Isaac and I decided to each try one, gotta see if they are suitable for others to eat! Within about 5 seconds of trying them, we were immediately counting how many were left and calculating the maximum number we could eat to still have enough for my co-workers. That good.

They are so easy and fun to make, do yourself a favor and make some! Your husband, boyfriend, kids, or coworkers will thank you. If you don’t have any friends, you will after making these.

OK so enough raving here’s how to do it:

  • buy two packs of strawberries (roughly 20)
  • 1- 8oz package of cream cheese
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla
  • graham crackers
  • chocolate chips (if you want)

Gut the strawberries using a small knife. Mix the cream cheese, powdered sugar, and vanilla together. Put into a zip loc bag, cut the corner, and fill the strawberry shells with the heavenly goodness. Top them with crushed up graham cracker crumbs and melted chocolate drizzle if you want. That’s it! Ridiculously easy, right? Nothing that easy should taste so good.

  3. Let’s make this when I come and visit!! Also, I wonder what would happen if you used some of the strawberry guts in the cheesecake filling.. or if you added mini chocolate chips.. or…wow the possibilities are endless and now I’m far too hungry!
